Grande Dunes Management is seeking a Food & Beverage Director who will oversee all aspects of Food and Beverage operations for three locations: Grande Dunes Members Club, the Ocean Club and Anchor Café (on the Intercoastal), including a la carte service, special events, and club events. Position is responsible for service standards, event execution, financial management, member/customer engagement and personnel. The ability to exercise considerable initiative, independent judgment and discretion is required. The Director will promote a service focused environment, representing McConnell Golf, the Club facilities, its membership, the management team and ownership with utmost professionalism at all times. This position will work hand-in-hand with the Executive Chef, Member Relations Coordinator / Catering Manager, Ocean Club Director, and other club staff members providing leadership and vision to staff and members alike.

Position Responsibilities:  
Significant responsibilities will include leading and developing staff, managing and controlling expenses, managing inventory, and ensuring the outlets are properly set prior to, during, and after service.
  • Hires, trains and develops direct reports and all Food & Beverage Staff.
  • Works with Executive Chef on menu development. Responsible for Wine List development and inventory management.
  • Prepares annual budgets, monitors variances, recommends necessary adjustments for improvement.
  • Monitors personnel costs, including hours, scheduling, and overtime.
  • Monitors, approves, and improves standardized operating procedures for food and beverage operation.
  • Helps plan and approve internal and external marketing and sales promotion activities for food & beverage department.
  • Maintains open communication between all departments.
  • Ensures effective operations during Club events and daily service by regularly conducting walk-throughs and spot checks, and ensuring corrective actions are taken to address any deficiencies.
  • Incorporates safety and sanitation into service standards and staff practices. MUST be willing and able to recognize and enforce current CDC and OSHA guidelines (staff and guests).
  • Maintains contact with members; ensures maximum member satisfaction; receives and resolves complaints from members, guests, and employees. Develops or revises processes to reduce recurrence of avoidable errors.

$2.1MM Annual F&B Revenue:: 
3 unique locations (public and private)

Education, Skills and Experience: 

  • Solid knowledge of the Food & Beverage operation; including but not limited to costing of menus, labor management, wine and liquor programs.
  • At least 5 years of experience overseeing multiple functions and clubhouse operations in a Food & Beverage Director role in a country club or resort environment with golf facilities. Beach club experience a plus.
  • Proven success in training, development, and creating an intentional leadership culture strongly preferred.
  • Superior organization, leadership, and communication skills required.
  • Working knowledge of general business practices such as accounting, purchasing, human resources, etc.
  • Proficient knowledge of serve-safe environment, workers compensation and labor laws and general liability processes.
  • Proficiency in standard MS Office computer programs, as well the ability to learn and use Club-specific software programs (POS, inventory management, etc.) is required. Experience with Club Essentials preferred.
  • Able to handle multiple tasks in a fast-paced environment with minimal Management supervision.

Physical and Other Requirements:
Hours will vary, but early morning, evening, weekend, and holiday availability is required, based on business needs. Work conditions of this position will vary from an office to various outdoor settings around the Club property, and may require long periods of standing, lifting, carrying, and walking. The employee should be able to lift, move, and/or carry up to 30 pounds, as well as perform various functions that may require climbing, pushing, pulling, kneeling, and reaching.

This position is subject to on-call work. The final candidate must pass a pre- employment background investigation including a driving record check required to operate Club vehicles.

Salary Range:
The Club offers a generous compensation package consisting of a base salary of $70,000 - $80,000 commensurate with experience, plus bonuses, health and welfare benefits, time off benefits, 401K and educational affiliate allowance.
