Lake Toxaway Country Club is looking to hire an Executive Chef.  The successful candidate will be a talented culinary professional that will establish and work well with the entire culinary and service team by implementing culinary standards and programs that will continuously strive to increase member and guest satisfaction.  Experience with a seasonal culinary operation is necessary.  The Executive Chef is responsible for successfully managing all culinary aspects of the food and beverage operations at Lake Toxaway Country Club.  This position works closely with the Food and Beverage Director, GM, AGM, Golf Professionals and Membership Sales Manager, while leading the Culinary and Catering team. The Executive Chef will report directly to the General Manager.

Position Objective:
To use motivation, organization, and team work to promote growth and sustain high member satisfaction in all food and beverage operations.  Specifics would include building and inspiring an exceptional culinary team, increasing food and beverage revenues while keeping all costs in line, and helping to ensure an exceptional experience for our members and guests with each visit to the club.  

Essential Functions:

  • Be present or have an approved supervisor present for all meal service periods and events at the club.
  • Build a Team that can deliver expected results to the memberships and owner.  This position is responsible for hiring, training, scheduling, evaluating, and coaching culinary team.
  • Participate in staff meetings with the goal of understanding all upcoming events and their details. 
  • Execute superior member and guest service by getting to know their specific needs and wants to ensure a unique and focused dining room or event experience.
  • Conduct regular team meetings to communicate all upcoming events, expectations, review successes and opportunities, discuss team goals, and ensure that all policies and procedures are being met.
  • Ensure that all legal requirements, as well as Serve Safe food safety protocols are followed.
  • Purchase and receive all food and beverage to ensure proper quantity, quality and price for all needed items.
  • Keep food COGS percentage within budgeted parameters.
  • Ensure completion of all opening/closing procedures (to incorporate detailed duties).
  • Communicate daily with General Manager and other department heads with the consistent goal of meeting the highest member satisfaction at minimum cost to the club.
  • Work with Director of Food and Beverage and General Manager on a la carte dining, banquet and other outlet food and beverage menus and pricing.
  • Work with Communications Director to plan and approve internal and external marketing activities for the food and beverage department.
  • Help create new events and other revenue generating ideas that will be well received by the membership.
  • Work hand in hand with the Event Director on all club and private events to ensure proper execution.
  • Monitor all kitchen employee punches, attendance, and interaction with members.
  • Administrative duties will include but are not limited to: menu creation, marketing, ordering, coding invoices, inventory, budgeting and staff management, including hiring and terminations.
  • Work alongside Food & Beverage Managers and staff to develop new and helpful ideas to improve overall operations.
  • Ensure Club's purchase programs are followed and updated.
  • Responsible for coordinating employee housing and other staff needs with Assistant General Manager.
  • This is a highly visible position requiring a personable manner with the ability to forge respectful relationships with a "hands on" approach to daily operations.  
  • Candidates must have a professional appearance, a good sense of judgment, integrity and consistency in work ethic.
  • Sets example for other employees to follow regarding organization, cleanliness, proper attire, and proper staff relations.
  • Enforce all club rules and policies.
  • Complete other tasks requested by the General Manager. 

Candidate Experience and Qualifications:

  • Exceptional cooking skills
  • Education and or Experience - Culinary degree is preferred but not required
  • Ability to work 8+ hours at a time, holidays, and weekends
  • Minimum of 3 years' experience as an Executive Chef 
  • Prior experience in a private club is preferred but not required
  • Basic computer knowledge and skills are required

Work Structure:

  • An annual salaried position with the majority of hours devoted to executing all meal periods of the restaurants.  Expected to work and be visible during daily service and the great majority of club events.

Compensation and Benefits:

  • Annual Salary of $90,000-$110,000

Club Information:
Lake Toxaway is a private, gated mountain community located just minutes from Cashiers, Highlands and Brevard N.C. in the heart of the Blue Ridge Mountains. The Lake Toxaway community has a rich history that dates back to the early 1900's, when prominent turn-of-the century families retreated to the area to embrace the unspoiled beauty of Mother Nature and enjoy the company of dear friends and family. 
 
One of the club's most unique benefits is its location. Nestled in the heart of North Carolina's most beautiful, unspoiled mountains, the club is conveniently located just a short drive from major metro areas such as Atlanta, Charlotte, Asheville and Columbia, SC., making it a desired and easily accessible weekend and summer retreat for families.

The recent clubhouse transformation encompassed the joining of two existing buildings into one state-of-the-art, energy-efficient facility, including an all new façade and roof.  The inspiration for the new design is a "Lakeside Lodge" theme featuring cedar shake siding, stone accents and attractive trim details.  Upon arrival, members are now greeted by a newly landscaped front entrance and Porte cochere. 

Inside, the clubhouse provides members with multiple dining and social venues, including a new casual grille with inside and outside walk-up bar service, expanded covered patio seating with spectacular lake and golf course views and a main ballroom with a large gable window and covered porch with views of the Blue Ridge Mountains.  The scope of the project also included a new entry hall with casual gathering spaces, completely new men and ladies' locker rooms, and additional rooms perfect for private dinners, playing cards and corporate retreats.  Following the renovation, the club was honored by Golf Inc. with a prestigious "Golden Fork" award, which recognized the dining facilities at Lake Toxaway Country Club as a Most Improved Restaurant in the private club category.

As of August 2020, the club has completed "phase II" of its ambitious renovation plans with the opening of the Lake Club.  Combining a new multi-generational/multi-use swimming pool together with the Lake Club Grille, Pool house and Youth Activities Center has added an entirely new dimension to the club.  Three new Pickleball courts completed the project and have added a more than expected positive response from the club's membership.

Food and Beverage Operation:
Dining venues include the Firestone Grille which has 120 seats (split evenly indoor and outdoor on covered porch), The Vanderbilt Dining Room which seats 150 in a more traditional banquet setting and the new Lake Club Grille which is located at our new pool facility and has seating for 40 ppl.  Total Food & Beverage revenue is approximately $1.7 M with about 14% coming from banquets.  Our membership is active, and utilization is high, especially in food and beverage.  Even with our high seasonal volume, we pride ourselves on catering to our members individual needs as much as possible.
